Baked Chicken with Roasted Cauliflower & Hasselback Potatoes

INGREDIENTS:
4 russet potatoes (about 6" in length)
Olive oil
4 tbsp Italian seasoning
4 tbsp melted butter
2 chicken breasts
1/2 tsp Oregano
1/2 tsp paprika
1/2 tsp garlic powder
Salt & pepper
1 head cauliflower
3 cloves garlic (or 3 tsp)
1 tbsp lemon juice (half a lemon)
INSTRUCTIONS:
- Preheat oven to 425 degrees and line baking sheet with parchment paper or aluminum foil.
- Rub potatoes with 1 tbsp olive oil and sprinkle with salt. Slice a thin portion on one side of the potatoes lengthwise (so it sits flat) and set aside.
- Place the potato on the flat side and make 1/8" thick slices, ensuring not to cut all the way through the potato. Can use wooden spoons or chop sticks on either side of the potato to stop from cutting all the way through. (see image below if not understanding what I mean for the cutting)
- Place potato flat side down on the baking sheet and try to fan out slices.
- Mix melted butter with 4 tbsp Italian seasoning and brush onto potatoes. Season with salt & pepper.
- Bake for 30 minutes. After thirty minutes, baste with butter and bake another 20 minutes.
- Once potatoes are baking, cut cauliflower into florets and mix in a small bowl with lemon juice, minced garlic, olive oil, salt & pepper. Place on another lined baking sheet.
- Bake cauliflower for 5-8 minutes while preparing the chicken.
- Cut chicken breasts in half to create 4 cutlets.
- In a separate small bowl, combine 1/2 tsp salt, 1/4 tsp pepper, oregano, paprika, and garlic powder with oil to create a paste and coat chicken breasts.
- After 5-8 ish minutes, remove cauliflower from the oven and place chicken cutlets on part of the baking sheet.
- Bake cauliflower and chicken for 20 - 25 minutes or until cauliflower is tender and chicken is cooked to 165 and no longer pink.
- Should ideally finish around the same time. Serve potato with chicken and cauliflower.
TIDBITS:
- If you want a little extra flavorrr, could top potato with sour cream or cheese.
