BBQ Chicken Sheet Pan

Servings: 4-5 
Time: 1 hour


INGREDIENTS:

3-4 chicken breasts
1 sweet potato 
1 package green beans
½ head cauliflower
Garlic powder (approx. 2 tsp total)
Onion powder (approx. 2 tsp total)
Paprika  (approx. 2 tsp total)
Chili powder (approx. 2 tsp total)
Salt  (approx. 2 tsp total)
Pepper  (approx. 1 tsp total)
BBQ Sauce 


INSTRUCTIONS:

  1. Preheat oven to 375 F. Grease your preferred sheet pan, ideally the biggest one you have.
  2. Peel sweet potato and dice. Drizzle olive oil onto potatoes. Season with approximately 1 tsp of onion powder, garlic powder, paprika, chili powder, salt, and pepper. Spread onto pan. Bake for 25 minutes. 
  3. While potatoes are baking, cut tips off of green beans and cut cauliflower into florets. Place into a bowl and set aside. 
  4. Trim excess fat off of chicken breasts and tenderize with a meat mallet or rolling pin. Season breasts with approximately 1 tsp of onion powder, garlic powder, paprika, chili powder, salt, and pepper. 
  5. Once potatoes have baked, push off to the side. Add the chicken and veggies to the pan. Drizzle olive oil or spray onto veggies and season with your desired amount of salt and pepper. Cover chicken breasts with BBQ sauce. Bake for 25 additional minutes. 
  6. Remove from the oven, check your chicken is cooked to 165/no longer pink and voila!
