BBQ Chicken Zucchini Boats

Servings: 4-6

INGREDIENTS:

4 medium zucchini, sliced in half lengthwise 
1 pound cooked and shredded chicken
1 ½ tbsp olive oil (divided)
2 garlic cloves, minced
½ red onion, finely diced
1 cup BBQ sauce (divided) 
1 ½ cup shredded cheddar cheese
Green onions

INSTRUCTIONS:

  1. Preheat the oven to 400 degrees and grease a 9x13 inch pan. 
  2. Using a spoon, scoop centers from zucchini while leaving a small rim to create boats. Place boats into the greased pan. 
  3. Brush zucchini with a little olive oil. Sprinkle them each with salt and pepper. Bake for 15 minutes or until your BBQ mixture is ready to be added to boats.
  4. While zucchini is baking, add ½ tbsp of olive oil to a medium skillet over medium heat. Add in onions and garlic and saute for 3-5 minutes. 
  5. Transfer to a large bowl and stir in shredded chicken, ½ cup BBQ sauce, and ½ cup shredded cheddar cheese. 
  6. Remove zucchini from the oven and spoon mixture evenly into the zucchini boats. Top each with BBQ sauce (about 1 tbsp) and 1 ½ tbsp cheddar cheese. 
  7. Place back into the oven and bake for 20 minutes.
  8. Once finished baking, sprinkle the tops with green onions and serve!
