BBQ Chicken Zucchini Boats

INGREDIENTS:
4 medium zucchini, sliced in half lengthwise
1 pound cooked and shredded chicken
1 ½ tbsp olive oil (divided)
2 garlic cloves, minced
½ red onion, finely diced
1 cup BBQ sauce (divided)
1 ½ cup shredded cheddar cheese
Green onions
INSTRUCTIONS:
- Preheat the oven to 400 degrees and grease a 9x13 inch pan.
- Using a spoon, scoop centers from zucchini while leaving a small rim to create boats. Place boats into the greased pan.
- Brush zucchini with a little olive oil. Sprinkle them each with salt and pepper. Bake for 15 minutes or until your BBQ mixture is ready to be added to boats.
- While zucchini is baking, add ½ tbsp of olive oil to a medium skillet over medium heat. Add in onions and garlic and saute for 3-5 minutes.
- Transfer to a large bowl and stir in shredded chicken, ½ cup BBQ sauce, and ½ cup shredded cheddar cheese.
- Remove zucchini from the oven and spoon mixture evenly into the zucchini boats. Top each with BBQ sauce (about 1 tbsp) and 1 ½ tbsp cheddar cheese.
- Place back into the oven and bake for 20 minutes.
- Once finished baking, sprinkle the tops with green onions and serve!
