Chicken and Shrimp Kabobs

INGREDIENTS:
2-3 chicken breasts
8 oz deveined shrimp
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 white onion, sliced
1 tbsp olive oil for meat and 1 tbsp for veggies
1 tsp salt for meat and 1/2 tsp for veggies
½ tsp pepper for meat and 1/2 tsp for veggies
½ tsp garlic powder
½ tsp paprika
Wooden or metal skewers
INSTRUCTIONS:
- Preheat the grill to medium-high heat. If you are using wooden skewers, soak them in water for 15 minutes before using.
- Cut the chicken breasts into 1 inch pieces. Add chicken and shrimp to a large mixing bowl and drizzle evenly with olive oil.
- In a separate small bowl, whisk together salt, pepper, garlic powder, and paprika for the meat until combined. Sprinkle the seasoning mixture evenly over the chicken and shrimp. Toss until coated.
- Thread the chicken and shrimp onto separate skewers.
- Place onions and peppers into either a grill frying pan or fold into aluminum foil. Season with salt, pepper, and 1 tbsp olive oil.
- Once the grill is hot, place vegetables onto the grill and cook for 15-20 minutes.
- Cook chicken skewers for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through.
- Cook shrimp skewers for 6- 8 minutes, turning once halfway through until pink and opaque.
- Once all parts are cooked through, serve alongside other sides of your preference!
