Chicken and Shrimp Kabobs

Servings: 4 


INGREDIENTS:

2-3 chicken breasts 
8 oz deveined shrimp
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 white onion, sliced
1 tbsp olive oil for meat and 1 tbsp for veggies
1 tsp salt for meat and 1/2 tsp for veggies
½ tsp pepper for meat and 1/2 tsp for veggies
½ tsp garlic powder
½ tsp paprika 
Wooden or metal skewers


INSTRUCTIONS:

  1. Preheat the grill to medium-high heat. If you are using wooden skewers, soak them in water for 15 minutes before using.
  2. Cut the chicken breasts into 1 inch pieces. Add chicken and shrimp to a large mixing bowl and drizzle evenly with olive oil. 
  3. In a separate small bowl, whisk together salt, pepper, garlic powder, and paprika for the meat until combined. Sprinkle the seasoning mixture evenly over the chicken and shrimp. Toss until coated. 
  4. Thread the chicken and shrimp onto separate skewers. 
  5. Place onions and peppers into either a grill frying pan or fold into aluminum foil. Season with salt, pepper, and  1 tbsp olive oil.
  6. Once the grill is hot, place vegetables onto the grill and cook for 15-20 minutes. 
  7. Cook chicken skewers for 10-14 minutes, turning once halfway through, until the chicken is golden brown and cooked through. 
  8. Cook shrimp skewers for 6- 8 minutes, turning once halfway through until pink and opaque. 
  9. Once all parts are cooked through, serve alongside other sides of your preference!
