Chicken Parmesan Zucchini Boats

INGREDIENTS:
3 large zucchinis
1 lb. ground chicken
2 cups marinara or pasta sauce
2 cups shredded mozzarella
1 cup shredded parmesan
Salt & pepper to taste
1 tsp garlic powder
INSTRUCTIONS:
- Preheat your oven to 400 degrees and grease a 9x13 baking dish.
- In a large skillet over medium heat, cook the ground chicken until no longer pink. Season with salt, pepper, and garlic powder.
- Mix in about 2 cups of marinara or pasta sauce with the chicken and turn the heat to low to thicken and absorb - about 5 minutes.
- While the chicken and sauce are simmering, cut the stems off of your zucchini and cut in half lengthwise. Use a spoon to carve out the insides.
- Mix in 1 cup of shredded mozzarella and ½ cup of parmesan to the chicken mixture. Stir until melted.
- Place zucchini boats into the baking dish side by side. Fill the zucchini boats with chicken mixture. Sprinkle remaining mozzarella and parmesan on top.
- Bake uncovered on the center rack for 25 minutes. Broil for an additional few minutes until the cheese is browned.
