Chipotle Chicken Avocado Sandwich

Time: 30 minutes


INGREDIENTS:

2 large chicken breasts
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1 tsp salt
½ tsp pepper
½ red onion
1 - 2 avocados
8 slices of sourdough bread (or 4 ciabatta rolls)
8 slices pepper jack cheese
Chipotle aioli or chipotle sauce 
Bag salad of choice 


INSTRUCTIONS:

  1. If you want to grill your chicken, start by heating up your grill. Otherwise change the following instructions based around a frying pan.
  2. Slice chicken breasts in half long ways to have 4 thinner slices of chicken. Mix together seasonings and evenly disperse across the 4 chicken breasts, coating both sides. 
  3. Cut onion into thin slices. Half avocados, remove the pit, and slice. Set aside for when you start assembling sandwiches. 
  4. Place chicken on the grill - about 2 -3 minutes on each side or until cooked through to 165 degrees. Place slices of bread on the grill also until slightly charred on both sides. 
  5. When bread is charred, add a slice of pepperjack cheese to each piece of bread and let it melt slightly.  
  6. Place chicken breasts on bread and cover with red onions and slices of avocado. Smash down the avocado and top with a pinch of salt and pepper. Cover with your desired amount of chipotle aioli or chipotle sauce. 
  7. Place the other slice of bread on top. Option to fry in a pan to further brown the bread if desired. Serve alongside bag salad of your choice.
