1 cup panko bread crumbs
2 tbsp olive oil
2 tbsp fresh dill (could sub dried but cut down to 1 tbsp)
¼ tsp salt + ½ tsp
⅛ tsp pepper + ¼ tsp
2 lemons
1 small head of broccoli ( cut into florets and chopped to bite size pieces)
1 box angel hair pasta
1 tbsp butter
INSTRUCTIONS:
- Preheat the oven to 400 degrees. Prep a baking sheet coated with cooking spray.
- Bring a medium pot of water to a rolling boil and cook noodles.
- Toss together panko bread crumbs, olive oil, dill, ¼ tsp salt, and ⅛ tsp pepper.
- Place tilapia on the baking sheet and cover with juice of 1 lemon. Top with crumb mixture and pat to help stick to the top of the fish.
- Bake uncovered until the fish begins to flake easily with a fork, about 12-15 minutes.
- While the fish is baking and noodles are cooking. Fill a microwave safe dish with about 3 tbsp of water and chopped broccoli. Cover the dish and microwave for 4-5 minutes until broccoli is tender.

- Remove tilapia from the oven and serve with broccoli pasta mixture.
TIDBITS:
- If not wanting to have broccoli could swap for cut up asparagus or snap peas.
