Crispy Dill Tilapia with Broccoli & Angel Hair Pasta

Time: 30 minutes


INGREDIENTS:

4 tilapia filets
1 cup panko bread crumbs
2 tbsp olive oil
2 tbsp fresh dill (could sub dried but cut down to 1 tbsp)
¼ tsp salt + ½ tsp
⅛ tsp pepper + ¼ tsp 
2 lemons
1 small head of broccoli ( cut into florets and  chopped to bite size pieces)
1 box angel hair pasta 
1 tbsp butter


INSTRUCTIONS:

  1. Preheat the oven to 400 degrees. Prep a baking sheet coated with cooking spray. 
  2. Bring a medium pot of water to a rolling boil and cook noodles. 
  3. Toss together panko bread crumbs, olive oil, dill, ¼ tsp salt, and ⅛ tsp pepper. 
  4. Place tilapia on the baking sheet and cover with juice of 1 lemon. Top with crumb mixture and pat to help stick to the top of the fish.
  5. Bake uncovered until the fish begins to flake easily with a fork, about 12-15 minutes. 
  6. While the fish is baking and noodles are cooking. Fill a microwave safe dish with about 3 tbsp of water and chopped broccoli. Cover the dish and microwave for 4-5 minutes until broccoli is tender. 
  7. Once noodles are cooked to al dente, drain and return to pot on low heat. Add broccoli, juice of 1 lemon, 1 tbsp butter, ½ tsp salt, and ¼ tsp pepper to the pot. Mix until butter is melted and all seasonings are mixed in. 
  8. Remove tilapia from the oven and serve with broccoli pasta mixture. 

TIDBITS:

  • If not wanting to have broccoli could swap for cut up asparagus or snap peas.
