Crockpot Tuscan Chicken

Servings: 6 
Time: 3 hours 10 minutes


INGREDIENTS:

4 boneless skinless chicken breasts
2 tsp Italian seasoning 
½ tsp onion powder 
Salt & pepper to taste
2 cloves garlic minced
½ cup sun dried tomatoes (drained & chopped)
½ cup chicken broth
1 cup half & half or heavy cream
½ cup parmesan cheese (grated)
1 cup baby spinach (chopped - optional)
Pasta or salad for serving


INSTRUCTIONS:

  1. Season the chicken breasts with Italian seasoning, onion powder, salt, and pepper on both sides. 
  2. Spray the inside of the crockpot with nonstick cooking spray. Layer the seasoned chicken in the bottom of the crockpot.
  3. In a mixing bowl, whisk together the chicken broth, cream, minced garlic, chopped sundried tomatoes, and parmesan cheese. 
  4. Pour the sauce over the chicken into the crockpot. 
  5. Cook on high for 3 hours or low for 5 hours.
  6. Before serving, add the chopped spinach to the crockpot, replace the lid, and allow the spinach to wilt. 
  7. Season with additional salt and pepper if needed. Serve over cooked pasta or as a salad. 

TIDBITS:

  • I got to making this recipe and realized I had no spinach! LAME sooo I changed that to "optional" on the ingredient list lol
  • If you like a thicker sauce I would definitely add in like an Alfredo sauce or vodka sauce because the broth from the crockpot chicken was pretty thin
