Crockpot Tuscan Chicken

Time: 3 hours 10 minutes
INGREDIENTS:
4 boneless skinless chicken breasts
2 tsp Italian seasoning
½ tsp onion powder
Salt & pepper to taste
2 cloves garlic minced
½ cup sun dried tomatoes (drained & chopped)
½ cup chicken broth
1 cup half & half or heavy cream
½ cup parmesan cheese (grated)
1 cup baby spinach (chopped - optional)
Pasta or salad for serving
INSTRUCTIONS:
- Season the chicken breasts with Italian seasoning, onion powder, salt, and pepper on both sides.
- Spray the inside of the crockpot with nonstick cooking spray. Layer the seasoned chicken in the bottom of the crockpot.
- In a mixing bowl, whisk together the chicken broth, cream, minced garlic, chopped sundried tomatoes, and parmesan cheese.
- Pour the sauce over the chicken into the crockpot.
- Cook on high for 3 hours or low for 5 hours.
- Before serving, add the chopped spinach to the crockpot, replace the lid, and allow the spinach to wilt.
- Season with additional salt and pepper if needed. Serve over cooked pasta or as a salad.
TIDBITS:
- I got to making this recipe and realized I had no spinach! LAME sooo I changed that to "optional" on the ingredient list lol
- If you like a thicker sauce I would definitely add in like an Alfredo sauce or vodka sauce because the broth from the crockpot chicken was pretty thin
