Egg Roll in a Bowl

Time: 35 minutes


INGREDIENTS:

1 ½ lbs lean ground beef 
1 large yellow onion (finely diced)
1 medium head of cabbage (sliced into strips)
3 medium carrots (peeled into strips) 
½ tsp onion powder
½ tsp garlic powder
¼ tsp red pepper flakes (optional)
1 ½  tsp ground ginger
1 tbsp minced garlic 
1/2 cup soy sauce or coconut aminos
2 - 3 tbsp sesame oil 
2 tbsp vegetable or olive oil


INSTRUCTIONS:

  1. Dice onion, cut cabbage, and slice carrots into strips.
  2. Cook ground beef over medium heat in a large skillet until the meat is no longer pink. Drain grease and return ground beef to the pan.
  3. Add diced onion and minced garlic, stirring well. Continue to cook over medium heat until the onions are soft, about 5-7 minutes. 
  4. Add 2 tbsp sesame oil, carrots, and cabbage to the skillet and stir well to combine. Let cook for 10 minutes, stirring often. 
  5. In a small separate bowl, combine onion powder, garlic powder, red pepper flakes (optional), ground ginger, soy sauce, and vegetable/olive oil. Whisk to combine. 
  6. Pour sauce mixture over meat and cabbage mixture. Reduce heat to medium low and continue to cook for 5-10 minutes while stirring often until your carrots and cabbage are tender. Serve and enjoy!

TIDBITS:

  • I think adding a smidge of honey and lime juice to the sauce adds some extra flavor flav but it definitely makes it sweeter so if you want a spicier option don't do that ha
