Egg Roll in a Bowl
Servings: 6
Time: 35 minutes
INGREDIENTS:
1 ½ lbs lean ground beef
1 large yellow onion (finely diced)
1 medium head of cabbage (sliced into strips)
3 medium carrots (peeled into strips)
½ tsp onion powder
½ tsp garlic powder
¼ tsp red pepper flakes (optional)
1 ½ tsp ground ginger
1 tbsp minced garlic
1/2 cup soy sauce or coconut aminos
2 - 3 tbsp sesame oil
2 tbsp vegetable or olive oil
INSTRUCTIONS:
- Dice onion, cut cabbage, and slice carrots into strips.
- Cook ground beef over medium heat in a large skillet until the meat is no longer pink. Drain grease and return ground beef to the pan.
- Add diced onion and minced garlic, stirring well. Continue to cook over medium heat until the onions are soft, about 5-7 minutes.
- Add 2 tbsp sesame oil, carrots, and cabbage to the skillet and stir well to combine. Let cook for 10 minutes, stirring often.
- In a small separate bowl, combine onion powder, garlic powder, red pepper flakes (optional), ground ginger, soy sauce, and vegetable/olive oil. Whisk to combine.
- Pour sauce mixture over meat and cabbage mixture. Reduce heat to medium low and continue to cook for 5-10 minutes while stirring often until your carrots and cabbage are tender. Serve and enjoy!
TIDBITS:
- I think adding a smidge of honey and lime juice to the sauce adds some extra flavor flav but it definitely makes it sweeter so if you want a spicier option don't do that ha
