Fish Taco Bowl with Chipotle Lime Mayo Sauce

INGREDIENTS:
MANGO SALSA (OR PINEAPPLE)
2 cup mango peeled and cubed
¼ cup red onion minced
¼ cup cilantro chopped
2 tbsp jalapeno seeded and minced
2 tbsp lime juice
Pinch of salt
CHIPOTLE LIME MAYO SAUCE
1/2 cup mayonnaise (could swap with plain greek yogurt)
2 tbsp lime juice
1 1/2 tsp chili powder
Pinch of cayenne pepper
FISH
4 filets of your favorite white fish (I used tilapia - recipe recommended cod)
2 tbsp avocado or olive oil
2 tbsp taco seasoning
1 tsp sea salt
CILANTRO LIME CAULIFLOWER RICE
2 tbsp avocado or olive oil
3 packages frozen cauliflower rice
¼ cup lime juice
½ cup cilantro chopped
1 tsp sea salt
TOPPINGS
1 jalapeno sliced
3 cups red cabbage chopped (or green if you can't find red)
1 avocado sliced
1 cup cilantro leaves roughly chopped
DIRECTIONS:
1. Preheat oven to 375
2. Chop and prep all toppings
3. Combine all ingredients for mango salsa in a medium bowl and set aside.
4. Mix all ingredients for chipotle lime mayo sauce in a small bowl. Add a little water so the sauce is easily drizzable. About ½ tsp.
5. Prepare fish and place on a baking dish, rubbing oil on both sides. Sprinkle half the taco seasoning and salt to one side and rub in. Flip the filets and repeat on the other side.
6. Bake for 15 minutes - or until the fish is tender and flakes easily with a fork.
7. While the fish is baking, prepare the cauliflower (or normal) rice by heating a large skillet, adding cauliflower rice and stirring often - about 10 minutes - until tender and water has evaporated. Season with salt. Turn off heat and stir in lime juice and cilantro.
8. Arrange cauliflower rice and top with flaked fish, mango salsa, and your toppings. Drizzle with sauce and enjoy.
TIDBITS:
- Mangos were unavailable at my grocery store so I swapped for pineapple and it was equally yummy
- Also didn't want to drive to another grocery store to find red cabbage so we swapped for green - I do think red cabbage would be better & prettier
- I used normal rice and still added all the cauliflower rice seasonings/spices. Big carbohydrate fans in our household.
