Flank Steak with Baby Potatoes

INGREDIENTS:


1 flank steak
Salt
Pepper
Oil
Baby potatoes
Bag salad of your choice (I love any of the Costco salads)


DIRECTIONS:

  1. Remove the flank steak from the refrigerator and season amply on both sides with salt and pepper approximately an hour before you plan to start grilling.
  2. Preheat a convection oven to 400 degrees or change settings on a normal oven to roast and preheat to 400 degrees.
  3. After the steak has been sitting out for 30 minutes, place baby potatoes on a baking sheet and cover in oil. Season with salt and pepper if desired.
  4. Bake baby potatoes on the roast setting (or convection) for 30 minutes.
  5. Once ready to start grilling and the grill is warm, grill steak for 4-5 minutes on either side or to desired doneness. Depending on the thickness of steak may need more or less time - so use your best judgment. 
  6. Prepare your bag salad and remove potatoes from the oven.
  7. Cut flank steak into strips.
  8. Serve together and enjoy!

  • Josh’s personal tidbit is that steak should only be  served with a pour of bourbon. His personal favorite is Elijah Craig
    • (my personal preference is a glass of sauvignon blanc but this is his tidbit not mine)
