Flank Steak with Baby Potatoes

INGREDIENTS:
1 flank steak
Salt
Pepper
Oil
Baby potatoes
Bag salad of your choice (I love any of the Costco salads)
DIRECTIONS:
- Remove the flank steak from the refrigerator and season amply on both sides with salt and pepper approximately an hour before you plan to start grilling.
- Preheat a convection oven to 400 degrees or change settings on a normal oven to roast and preheat to 400 degrees.
- After the steak has been sitting out for 30 minutes, place baby potatoes on a baking sheet and cover in oil. Season with salt and pepper if desired.
- Bake baby potatoes on the roast setting (or convection) for 30 minutes.
- Once ready to start grilling and the grill is warm, grill steak for 4-5 minutes on either side or to desired doneness. Depending on the thickness of steak may need more or less time - so use your best judgment.
- Prepare your bag salad and remove potatoes from the oven.
- Cut flank steak into strips.
- Serve together and enjoy!

- Josh’s personal tidbit is that steak should only be served with a pour of bourbon. His personal favorite is Elijah Craig
- (my personal preference is a glass of sauvignon blanc but this is his tidbit not mine)
