Garlic Butter Ground Turkey with Cauliflower Skillet

INGREDIENTS:

1 lb ground turkey
½ head of cauliflower
1 tbsp olive or vegetable oil
1 tbsp lemon juice
3 tbsp butter
2 tbsp minced garlic 
1 tbsp onion powder
¼ cup soy sauce or coconut aminos
2 tbsp hot sauce (sriracha or buffalo sauce)
2 tsp sesame oil
Fresh chopped cilantro 
¼ cup water
Red chili flakes (optional)
Lemon slices (garnish)


INSTRUCTIONS:

  1. Cook cauliflower florets either in boiling water or in a vegetable steamer.
  2. Heat a large skillet over medium-low with 1 tbsp oil. Saute the pre-cooked cauliflower in the skillet until slightly golden brown, ensuring not to burn the  cauliflower. Add lemon juice, some fresh cilantro, salt, and pepper to your taste and toss to coat well. Move to a separate plate to keep warm.
  3. In the same skillet, melt butter and cook ground turkey, breaking the meat apart. When the turkey meat is no longer pink, add garlic and onion powder, stirring to mix. Then add soy sauce, water, and hot sauce and continue cooking, stirring regularly for a couple minutes. 
  4. Push the ground turkey to one side of the skillet and return the cauliflower to the skillet. Coat the cauliflower in the sauce and let sit to reheat. Add a drizzle of sesame oil, sprinkle with cilantro, add optional red chili flakes, and garnish with lemon slices. Serve along with rice if desired or with greens.
