Garlic Butter Steak with Parmesan Cream Sauce

Servings: 3-4
Time: 30 minutes


INGREDIENTS:

2 lbs steak (your choice but go read the tidbits)
4-5 tbsp olive oil, divided

SAUCE:
5 tbsp butter, divided
10 garlic cloves, minced (10 tsp)
1 ½ cups heavy cream
½ tsp red pepper flakes
⅔ cup parmesan 

BLACKENED SEASONING:
1 tbsp paprika
1 tsp cayenne pepper
½ tbsp onion powder
1 tsp garlic powder
½ tsp black pepper
½ tsp salt
¼ tsp dried thyme
¼ tsp dried oregano 

Asparagus (see tidbits if want this as a side)
1 bag baby potatoes (see tidbits if want this as a side)


INSTRUCTIONS:

  1. Prep your blackened seasoning. Cut steak into small pieces. Rub evenly with olive oil and then season well on all sides with blackened seasoning. Allow the steak to sit at room temp for 10-15 minutes. (start making potatoes and asparagus if desired)
  2. In a large skillet over medium-high heat. Heat 2-3 tbsp olive oil and add in steak pieces.
  3. Cook them undisturbed for about 2 minutes or until golden. Flip once. Continue to cook for 1 minute, reduce heat and cook for 1 more minute. Remove and place into a bowl.
  4. Add in 3 tbsp of butter and 3 tsp of minced garlic. Saute until fragrant. Toss the steak in the garlic butter, coating on all sides. Cook for another minute and then remove back to the bowl with  aluminum foil tented over to keep warm/moist.
  5. In the same pan with the residual butter and garlic, add 2 more tbsp of butter and remaining minced garlic. Saute until fragrant. Slowly whisk in the heavy cream and bring to a simmer, allowing it to reduce for 3-5 minutes. 
  6. Add in red pepper flakes and parmesan cheese. Whisk until the sauce thickens. Taste and add salt or pepper if needed. Serve with your preferred sides. 

TIDBITS:

  • Smashed Baby Potatoes 
    • Rinse baby potatoes and place in a medium bowl. Top with 1 tbsp olive oil, 1 tsp garlic powder, 1 tsp salt, and ½ tsp pepper. Place onto a greased baking sheet. Bake for 20 minutes at 375 degrees. After 20 minutes, smash down with a glass and bake for another 10 minutes. 
  • Asparagus 
    • Cut ends off of asparagus. Add to a greased baking sheet. Top with 1 tsp salt, 1 tsp pepper and 1 tbsp olive oil. Bake for 20 minutes at 375.
  • We had flank steak at the house but sirloin or ribeye would be better cut into 2-3" cubes
