Ground Beef Gyros

Servings: 4
Time: 30 minutes


INGREDIENTS:

VEGETABLE:
2 zucchinis (or vegetable side of your choice)
½ tsp paprika
½ tsp salt
½ tsp garlic powder
¼ tsp pepper
½ tbsp olive oil

GYRO:
1 lb ground beef 
½  tsp garlic powder
½  tsp salt
½ tsp paprika
1 tsp oregano
½ tsp ground coriander
½ tsp thyme
¼ tsp black pepper
1 tbsp lemon juice
½ cucumber, diced
½  red onion, sliced
½ tomato, diced 
Feta cheese for topping 
4 pita breads

TZATZIKI SAUCE:
¼ cup finely grated cucumber
½ cup whole milk plain greek yogurt
½  tbsp lemon juice
1 tsp olive oil
1 garlic clove, minced
⅛ tsp salt
½ tbsp chopped dill (or ½ tsp dried dill weed)


INSTRUCTIONS:

  1. Preheat the oven to 375 and prepare a baking sheet with aluminum foil and cooking spray.
  2. Slice a zucchini and add to a medium sized bowl. Add all vegetable seasonings + olive oil and toss to cover. Place zucchini on the baking sheet and bake for 12 minutes. After 12 minutes remove from the oven and mix/flip to cook evenly. 
  3. While the zucchini is cooking, chop all ingredients for gyros and set aside. Grate ¼ cup cucumber and set aside.
  4. Add ground beef to a frying pan on medium high heat. Add all seasonings to the pan and mix in evenly. Stir often and continue to mash down the ground beef. 
  5. While beef is cooking, mix all ingredients for tzatziki sauce in  a small bowl and set aside. 
  6. Option to toast pita bread on a grill, in a skillet, or just in the microwave. 
  7. Remove zucchini from the oven and begin assembling gyros. Place ground beef on the base of the pita. Top with cucumber, red onion, and tomatoes. Spread tzatziki sauce across and top with feta cheese. Serve alongside roasted zucchini. 

TIBITS:

  • If you don’t like raw red onion, add it to the ground beef and cook those two ingredients together. 
  • Try not to skip out on the coriander even though it’s not a common ingredient - the coriander and oregano mix is really what gives you the gyro flavor.
