Ground Beef Tostadas 

Time: 30 minutes
Servings: 4 - 5

INGREDIENTS:

10 corn tortillas (or pre prepared tostadas)
Oil spray (for baking tostadas) 
16 oz. ground beef
½ red onion, diced
1 tbsp taco seasoning 
½ tsp garlic powder
1 tsp salt
10 oz. refried beans
½ cup cheese of your choice
1 cup pico de gallo 
10 oz. yellow sweet corn
1 jalapeno, diced (optional) 

INSTRUCTIONS:

  1. Preheat the oven to 425. Spray the corn tortillas on both sides with oil. Lay them on a baking sheet. Bake in a preheated oven for 4 minutes and then flip and bake for another 4-5 minutes (or until golden/crispy).
  2. Cook the ground beef in a skillet over medium-high heat, breaking apart with a spatula. Drain excess grease. Season with garlic powder, salt, and taco seasoning. Add the diced onion and cook until the onion is translucent and the beef is fully cooked and browned. 
  3. Heat the refried beans in a skillet over medium-low heat or in a microwave until steaming hot. 
  4. Heat corn in a microwave safe dish. 
  5. Begin assembling tostadas. Top each tostada with refried beans, ground beef, pico de gallo, corn, jalapeno, and cheese. If you want the cheese melted, place back into the oven until melted, about 3-5 minutes.
