Hawaiian Chicken Sheet Pan with Cilantro Lime Rice

INGREDIENTS:
1-1.5 lbs chicken breast cut into cubes
1 red bell pepper
1 orange bell pepper
½ red onion cut into chunks
1 cup pineapple diced
½ cup BBQ sauce
1 tbsp olive oil + 1 tsp olive oil
½ tsp salt
¼ tsp pepper
2 limes
3 tbsp fresh chopped cilantro plus more for garnish
1 cup long grain rice
INSTRUCTIONS:
- Preheat oven to 350 degrees and prepare a baking sheet by lining with parchment paper or aluminum foil and spraying with cooking spray
- Season diced chicken with salt, pepper, and olive oil and add to a mixing bowl.
- Add diced bell peppers, red onion, and BBQ sauce to the bowl. Coat completely with sauce.
- Start cooking the rice according to the packaging.
- Place chicken, peppers, and onion mixture onto the baking sheet and cook in the oven for 20 minutes. Remove the sheet pan and add pineapple before returning to the oven for 10-20 more minutes or until the chicken is cooked through to 165 degrees.
- Once rice is cooked, combine chopped cilantro, juice of 1 lime, cooked rice, and 1 tsp olive oil in a medium bowl. Toss until completely mixed.
- Once chicken is cooked, remove the sheet pan from the oven and squeeze juice of 1 lime over it.
- Serve alongside the cilantro lime rice. Drizzle with BBQ sauce and top with cilantro if desired.
