Herb & Feta Crusted Salmon with Roasted Zucchini & Angel Hair Pasta

INGREDIENTS:
1 salmon filet
½ cup feta cheese
¼ cup chopped parsley
2 tbsp chopped fresh chives (or green onion)
½ lemon juiced
¼ tsp salt
Pinch of pepper
2 zucchini
2 tsp lemon pepper seasoning
Your box of choice of noodles (I use Pasta Roni - you can make your own but I’m realistic here)
DIRECTIONS:
1. Preheat oven to 400 degrees
2. Line 2 baking sheets with parchment or foil - grease baking sheets. Lay thawed salmon filet on one of the baking sheets.
3. Slice zucchini and toss in a bowl with a couple tbsp of olive oil and lemon pepper seasoning. Might want to add a little salt - about ½ tsp. Spread zucchini on the other baking sheet.
4. Combine parsley, chives, feta, lemon, salt and pepper on a cutting board. Run a knife through several times chopping up all ingredients. Spread the mixture over the salmon filet.
5. Bake both in the oven simultaneously for 20 minutes or until the salmon is cooked through and the zucchini has crispened a little.
6. When about 5-10 minutes are left on the timer, start your box of noodles. Just follow the instructions on the box - nothing special here just an easy carbohydrate add on.
TIDBITS:
- We like to get one of the massive filets from Costo. As a family of 2 we use ½ a big filet and vacuum seal/freeze the other half. If getting salmon from Aldi one of their filet’s is normally the perfect size for dinner and lunch the next day.
- Lemon pepper is my seasoning of choice for the zucchini because I like the lemon with the salmon BUT if that’s not your jam then use whatever seasoning you like on veggies.
