Jalapeno Popper Zucchini Boats

INGREDIENTS:

2 medium sized zucchini, halved and hollowed out
Olive oil
Salt 
Pepper
4 oz. cream cheese
¾ cup plain greek yogurt
2 jalapenos, chopped and seeded
6 slices of bacon, chopped into bits
1 cup shredded cheddar cheese
Raspberry preserves 

INSTRUCTIONS:

  1. Preheat oven to 375 F and prep a baking sheet/dish
  2. Halve zucchini boats and hollow out. Place on the baking sheet and season with salt, pepper, and a drizzle of olive oil. Bake in the oven for 10 minutes.
  3. While zucchini boats are baking, mix together cream cheese and plain greek yogurt until softened. Mix in chopped jalapeno, bacon, and cheddar cheese. 
  4. After 10 minutes, remove zucchini from the oven and spoon jalapeno mixture into the boats. Bake for an additional 25 minutes. 
  5. When there are 5 minutes remaining, remove zucchini and spread raspberry preserves over the mixture. Return to the oven.
  6. Serve alongside your protein of choice!
