Jalapeno Popper Zucchini Boats

INGREDIENTS:
2 medium sized zucchini, halved and hollowed out
Olive oil
Salt
Pepper
4 oz. cream cheese
¾ cup plain greek yogurt
2 jalapenos, chopped and seeded
6 slices of bacon, chopped into bits
1 cup shredded cheddar cheese
Raspberry preserves
INSTRUCTIONS:
- Preheat oven to 375 F and prep a baking sheet/dish
- Halve zucchini boats and hollow out. Place on the baking sheet and season with salt, pepper, and a drizzle of olive oil. Bake in the oven for 10 minutes.
- While zucchini boats are baking, mix together cream cheese and plain greek yogurt until softened. Mix in chopped jalapeno, bacon, and cheddar cheese.
- After 10 minutes, remove zucchini from the oven and spoon jalapeno mixture into the boats. Bake for an additional 25 minutes.
- When there are 5 minutes remaining, remove zucchini and spread raspberry preserves over the mixture. Return to the oven.
- Serve alongside your protein of choice!
