Week 2!
So glad you're here :)
Another week, another grocery haul and menu drop! I added in servings and times to these recipes, slowly improving things. All of the meals we have are based around using the leftovers for lunch the next day. If you have a bigger family and still want leftovers I'd increase everything if not double it. I know this seems like a lot of meat but keep the lunch rollover concept in mind. I hope this continues to help ease you into the week with full stomachs and calm minds!

MEATS:
- 2 lb ground beef
- (3 lb if wanting more for the meatloaf)
- 8 boneless skinless chicken breasts
- 2 for Monday, 4 for Thursday, 2 for Saturday)
- 1 rotisserie chicken shredded (enough for 4 cups)
- Bacon
- Pre cooked or raw - could sub turkey bacon
- 2 lb pork loin
FRESH PRODUCE & HERBS:
- Bundle of cilantro
- Fresh parsley (optional - garnish)
- Garlic
- 5 cloves for sloppy joe bowls, 3 for cilantro lime chicken, 7 cloves for BLT chicken, 5 for meatloaves, & 3 for cauliflower
- 23 cloves total

- 5(ish) for mashed potatoes, 4 for hasselback potatoes
- Head of cauliflower
CARBOHYDRATES:
- 8 large flour tortillas
- 2 packages of Spanish style rice
- White rice
SEASONINGS:
- Salt & pepper
- Chili powder
- Basil
- Ground coriander
- Can substitute for cumin or garam masala if necessary
- Ranch seasoning blend
- Garlic powder
- Onion powder
- Dried thyme
- Cumin
- Paprika
- Oregano

DAIRY:

- Shredded Mexican cheese
- 8 oz packed cream cheese
- Or low fat greek yogurt if wanting low cal

FROZEN:
- Cauliflower rice if choose not to use white rice in coconut lime chicken (1 bag= 2 servings)
