Week 2!

So glad you're here :)

Another week, another grocery haul and menu drop! I added in servings and times to these recipes, slowly improving things. All of the meals we have are based around using the leftovers for lunch the next day. If you have a bigger family and still want leftovers I'd increase everything if not double it. I know this seems like a lot of meat but keep the lunch rollover concept in mind. I hope this continues to help ease you into the week with full stomachs and calm minds!


SUNDAY:

Sloppy Joe Bowls
Sloppy Joe Bowls Servings: 4 Time: 25 minutes INGREDIENTS: SWEET POTATO SLICES: 1 large sweet potato cut in ¼ inch slices *** (in my opinion this would be better with sweet potatoes as small cubes instead of slices) 1 tbsp olive oil 1 tsp salt SLOPPY JOE MIX: 2 tbsp olive oil

Baked Chicken with Roasted Cauliflower & Hasselback Potatoes

MEATS:

  • 2 lb ground beef
    • (3 lb if wanting more for the meatloaf)
  • 8 boneless skinless chicken breasts
    • 2 for Monday, 4 for Thursday,  2 for Saturday)
  • 1 rotisserie chicken shredded (enough for 4 cups)
  • Bacon
    • Pre cooked or raw - could sub turkey bacon
  • 2 lb pork loin

FRESH PRODUCE & HERBS:

  • Bundle of cilantro 
  • Fresh parsley (optional - garnish)
  • Garlic
    • 5 cloves for sloppy joe bowls, 3 for cilantro lime chicken, 7 cloves for BLT chicken, 5 for meatloaves, & 3 for cauliflower
      • 23 cloves total
  • Ginger (fresh or ground)
  • Bag of limes
  • 2 lemons 
  • 3 yellow onions

    • Can substitute for cumin or garam masala if necessary
  • Ranch seasoning blend
  • Garlic powder

  • Dried thyme

DAIRY:

  • Shredded cheddar cheese
  • Shredded Mexican cheese 
  • 8 oz packed cream cheese
    • Or low fat greek yogurt if wanting low cal
  • 2 ½ cups milk

  • Parmesan cheese (optional - garnish)

GENERAL GROCERY:

  • Olive Oil
  • Dijon mustard
  • Yellow mustard
  • Ketchup
  • Soy sauce or coconut aminos
  • Tomato paste
    • Enough for 2 tbsp
  • Apple cider vinegar (or any other kind of vinegar)
  • Pickles (optional - garnish)
  • Chicken broth
  • 1 14 oz. can coconut cream (or milk) 
  • 15 oz can enchilada sauce OR 2 8 oz cans 
  • 1 4 oz can green chiles 
  • 15 oz can black beans 
  • BBQ sauce 
  • Honey

FROZEN:

  • Cauliflower rice if choose not to use white rice in coconut lime chicken (1 bag= 2 servings)
