Happy Snow Week!

Just when we all thought we had beat winter, South Dakota came in and said HAHA. Well, I hope you all stay warm and cozy for this snowy Sunday and Monday coming up! If you noticed on the menu this week I cut back to only 6 meals. I was not making 7 meals a week and figured no one else probably was either. I was a little ambitious out of the gate with this haha. SUNDAY:

Greek Turkey Meatball Bowls

Garlic Butter Ground Turkey with Cauliflower Skillet Servings: 4 Time: 20 minutes INGREDIENTS: 1 lb ground turkey ½ head of cauliflower 1 tbsp olive or vegetable oil 1 tbsp lemon juice 3 tbsp butter 2 tbsp minced garlic 1 tbsp onion powder ¼ cup soy sauce or coconut aminos 2 tbsp hot

PROTEIN:

  • 7 boneless skinless chicken breasts
    • 3 for buffalo bowls, 4 for crockpot tuscan chicken 
  • 1 ½ lb ground beef
  • 2 lb ground turkey
    • 1 lb for turkey & cauliflower skillet, 1 lb for greek meatballs
  • Eggs (only need 1)
  • 1.5 - 2 lb top sirloin steak

FRESH PRODUCE & HERBS:

  • Fresh dill 
    • Or dried dill weed but if using dried cut the amount the recipe calls for in half
  • Bundle of cilantro 
  • Fresh parsley 
  • 13 cloves garlic (or 13 tsp minced)
  • Carrots 
    • 2 for buffalo bowl, 3 for egg roll in a bowl, 6 for steak tips
  • 1 cucumber
  • 2 yellow onion
  • 1 red onion
  • 1 package baby tomatoes
  • 2 Small head of cauliflower
    • 1 for buffalo bowls, 1 for turkey & cauliflower skillet
  • Baby arugula or other salad greens
  • Baby spinach 
  • 1 large head cabbage
    • ¾ for egg roll in a bowl and ¼ for buffalo bowls
  • 2 lemon
    • 1 tbsp juice for turkey & cauliflower skillet - & slices for garnish, 1 for meatballs 
  • 1 bag baby potatoes

DAIRY:

  • Plain low fat greek yogurt
  • Crumbled cheese for buffalo bowls
  • Half & half (or heavy cream) - enough for 1 cup
  • Parmesan cheese (grated)
  • Crumbled feta cheese

CARBOHYDRATES:

  • Brown or White rice
    • 1 ½ cups for buffalo bowls, 1 ½ cups for greek bowls

GENERAL GROCERY:

  • Olive oil
  • Sesame oil

  • Soy sauce or coconut aminos
