One Skillet Chicken with Green Beans

Time: 25 minutes
INGREDIENTS:
½ lb french green beans
1 tbsp olive oil
1 tbsp butter
4 boneless skinless chicken breasts thinly sliced
Salt and lemon pepper (to personal preference)
4 cloves garlic, minced
1 tsp onion powder
10 oz. mushrooms
½ cup chicken broth (low salt)
½ cup half-and-half + 1 tbsp flour
⅔ cup grated parmesan cheese
1 ½ cups of Israeli couscous (or swapped for your choice of carb like pasta, rice, orzo)
INSTRUCTIONS:
- Place green beans in a microwave safe dish with ½ cup water. Cook in the microwave for 5-6 minutes.
- In a large skillet, add olive oil and butter to the pan on medium high heat. Once the pan is hot, add sliced chicken, season with salt & lemon pepper in the pan and cook for about 4 minutes on each side until the chicken is browned.
- Start cooking couscous or your choice of carbohydrate.
- Add garlic, onion powder, pre cooked beans and mushrooms. Cook for 4 to 5 minutes, stirring regularly.
- Add chicken broth, half-and-half, and flour and reduce the sauce for a couple minutes until thickened slightly.
- Add parmesan cheese into the pan. Stir until cheese is incorporated with the sauce. Taste and season with more salt & pepper.
- Serve with couscous or your choice of carbohydrate.
TIDBITS:
- Option to swap chicken broth for white wine if want some added flavor flav.
- We left ours as full breasts instead of slices because I was confused what it meant by slices... and now I'm wishing I would have cut them correctly... so do as I say not what I do haha
