Baked Pepper Chicken
Time: 30 minutes
Servings: 4
INGREDIENTS:
4 chicken breasts
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 red onion, thinly sliced
½ tsp paprika
½ tsp salt
½ tsp pepper
8 slices pepper jack cheese (or cheese of your liking)
1 bundle asparagus
½ tsp salt
½ tsp pepper
1 tbsp olive oil
INSTRUCTIONS:
- Prepare two baking sheets with cooking spray and line with aluminum foil. Preheat the oven to 375 degrees.
- Cover chicken with paprika, salt, and pepper. Place chicken onto the baking sheet and cover evenly with peppers and onions. Bake for 15-20 minutes until chicken is partially cooked through. (if they are small chicken breasts cook for less time and keep an eye on it)
- Place asparagus onto the 2nd baking sheet and cover with salt, pepper, and olive oil. Place into the oven and bake for 20 minutes.
- Once chicken has cooked for 15-20 minutes, remove and cover each piece of chicken with 2 slices of pepper jack cheese. Return to the oven for 5 minutes.
- Remove the asparagus and change the oven to broil. Broil for 3-5 minutes until the cheese is slightly browned.
- Serve chicken alongside asparagus and your carbohydrate of choice!
TIDBITS:
- When I made this I had some really thick chicken breasts so truly adjust accordingly and just make sure your chicken is cooked through to 165!
