Baked Pepper Chicken

Time: 30 minutes
Servings: 4


INGREDIENTS:

4 chicken breasts
1 red bell pepper, thinly sliced
1 orange bell pepper, thinly sliced
1 red onion, thinly sliced
½  tsp paprika
½ tsp salt
½ tsp pepper
8 slices pepper jack cheese (or cheese of your liking)
1 bundle asparagus
½ tsp salt
½ tsp pepper
1 tbsp olive oil 


INSTRUCTIONS:

  1. Prepare two baking sheets with cooking spray and line with aluminum foil. Preheat the oven to 375 degrees.
  2. Cover chicken with paprika, salt, and pepper. Place chicken onto the baking sheet and cover evenly with peppers and onions. Bake for 15-20 minutes until chicken is partially cooked through. (if they are small chicken breasts cook for less time and keep an eye on it)
  3. Place asparagus onto the 2nd baking sheet and cover with salt, pepper, and olive oil. Place into the oven and bake for 20 minutes.
  4. Once chicken has cooked for 15-20 minutes, remove and cover each piece of chicken with 2 slices of pepper jack cheese. Return to the oven for 5 minutes.
  5. Remove the asparagus and change the oven to broil. Broil for 3-5 minutes until the cheese is slightly browned. 
  6. Serve chicken alongside asparagus and your carbohydrate of choice!

TIDBITS:

  • When I made this I had some really thick chicken breasts so truly adjust accordingly and just make sure your chicken is cooked through to 165!
