Pineapple Salmon

Time: 45 - 50 minutes
Servings: 4 - 5 


INGREDIENTS:

1 large salmon filet 
1 pineapple, sliced 
½ tsp garlic powder
½ tsp salt
½ tsp pepper 
½ tsp cajun seasoning
½ tsp paprika
½ tsp dried rosemary 
Juice of 1 lemon
Juice of 1 lime
5 garlic cloves minced (5 tsp) 


INSTRUCTIONS:

  1. Preheat the oven to 375 F.  Prep a baking dish.
  2. Cut the skin off of your salmon filet and slice pineapple.
  3. Lay slices of pineapple in the base of your baking dish. Season with a little salt and pepper. 
  4. Lay salmon filet over the pineapple and season with garlic powder, salt, pepper, cajun, paprika, and dried rosemary. Squeeze juice of lemon and lime over the filet and top with minced garlic. 
  5. Cover the baking dish with aluminum foil and bake for 30 - 40 minutes or until cooked through to 145 F. 
  6. Prepare your desired sides.  Serve salmon on top of a slice of cooked pineapple with your prepared sides. 

TIDBITS:

  • We served ours with white rice and asparagus. The rice soaked up some of the pineapple juices and it was super duper good. 
  • If you’re making asparagus, cut the ends and start baking it when the salmon has been in for 10 minutes so total cook time is about 20 - 25 mins. 
  • If your garlic turns green while it's baking don't freak out like I did - I guess it's a chemical reaction with the citrus of the lemon and lime.
