Salmon with Potatoes in Rosemary Cream Sauce

INGREDIENTS:
1 salmon filet cut into 4 pieces (could swap for 4 pieces of any fish preference)
1 lb red potatoes
3 tbsp olive oil
3 tsp salt
½ tsp pepper
3 tbsp butter
½ brown onion (diced)
3 cloves minced garlic
1 cup heavy cream
½ cup chicken stock
2 sprigs of rosemary
1 tsp lemon zest (zesting about ¼ of a lemon)
1 and ½ lemon juiced
2 tsp dijon mustard
⅛ tsp cayenne pepper (optional)
1 lb green beans with ends trimmed
INSTRUCTIONS:
- Preheat your oven to 450 degrees and center the rack. Grease an 8x8 (or 9x13 if necessary) baking dish with 1 tbsp olive oil
- Chop potatoes into 1 inch pieces, dice onion, and trim ends of green beans.
- Add potatoes into the baking dish and toss with another 1 tbsp olive oil, 1 tsp salt, and ¼ tsp black pepper. Place potatoes into the oven and roast for 30 minutes.
- Meanwhile, heat 1 tbsp butter and remaining 1 tbsp olive oil in a medium sized saucepan over medium heat. Once butter is melted, add your onion and cook, stirring until tender - about 4-5 minutes. Add the garlic and cook for another minute or so until it becomes fragrant.
- Add your heavy cream, chicken stock, rosemary sprigs, lemon zest, lemon juice, mustard, and cayenne pepper. Bring to a simmer and then reduce the heat to medium low and cook until the sauce starts to thicken - about 5 minutes.
- Sprinkle your salmon with 1 tsp salt.
- Remove the potatoes from the oven and nestle the fish into the potatoes. Pour the sauce over the top. Bake uncovered until the fish is flakey - about 10 - 12 minutes.
- While potatoes and fish are baking, place green beans into a microwave safe dish with a couple tbsp of water and microwave covered for 5-6 minutes.
- Remove green beans from the microwave and add 1 tbsp butter, juice of ½ a lemon, 1 tsp salt and ¼ tsp pepper. Mix together and keep warm until the fish and potatoes have finished.
- Remove the potatoes and fish from the oven and serve alongside green beans.
