Salmon Poke Bowls

Servings: 3-4
Time: 25 minutes


INGREDIENTS:

1 filet of salmon
1 tsp salt
1 tsp pepper
1 tsp ground ginger
1 tbsp sesame oil
1 tbsp rice wine vinegar
1 tbsp soy sauce
2 garlic cloves, minced
1 lime, juiced
1 red onion, diced
2 roma tomatoes, diced
2 carrots, diced or julienned
2 stalks green onion, sliced
½ cucumber, diced
1-2 cups of spinach per preference
½ avocado, diced
1 cup uncooked white rice
Sriracha or yum yum sauce for topping


INSTRUCTIONS:

  1. Start cooking your rice right away.
  2. Cut salmon filet into cubes and place into a medium sized mixing bowl. Season with salt, pepper, and ground ginger. Heat 1 tbsp sesame oil in a medium-sized pan. 
  3. Add salmon cubes to the pan along with 1 tbsp soy sauce, 1 tbsp rice wine vinegar, minced garlic, and juice of 1 lime. Cook until browned on all sides and cooked through.
  4. While salmon is cooking, prepare all diced ingredients and set aside for assembly.
  5. Once rice is finished and salmon is cooked through, assemble your bowl with all desired ingredients, top with yum yum sauce and sriracha if desired and enjoy!
