SAUSAGE & PEPPER HOAGIES:

6 servings 


INGREDIENTS:


2 bell peppers cut into strips
1 yellow onion cut into slices
1 tbsp olive oil
1 tsp salt
Black pepper to taste
6 Italian sausages 
6 hoagie rolls
1 ½ cups mozzarella
Chopped parsley for garnish


DIRECTIONS:


1. Position one of the oven racks on bottom and other towards the top (for broiling later). Preheat the oven to 425 degrees. 
2. Add peppers and onions to a large sheet pan, drizzle with olive oil and season with salt & pepper. Toss everything together and nestle sausage into the vegetables. 
3. Bake until the sausages are cooked and vegetables are tender, about 25 minutes.
4. When the sausages are cooked, load the hoagie rolls with sausage, peppers, and onions. Place on a clean pan and top with mozzarella. 
5. Turn on broiler and toast hoagies for 2-4 minutes. Want cheese to melt and buns to be toasted.
