Sheet Pan Chipotle Chicken with Broccoli & Potatoes

INGREDIENTS:

4 boneless skinless chicken thighs (1 ¼ lbs) OR swap for 1 ¼ lbs chicken breasts if preferred
1 large head of broccoli cut into florets 
1 cup of sliced red onion (about ½ a medium red onion)
1 bag of baby potatoes 
2 tbsp + 1 tsp olive oil
2 tsp brown sugar
½ tsp ground cumin
½ tsp chili powder 
½ tsp paprika
½ tsp onion powder
½ tsp garlic powder
½ tsp salt
⅛ tsp black pepper
⅛ tsp chipotle powder (or swap for more paprika)

FOR HONEY MUSTARD SAUCE:
3 tbsp mayonnaise
2 tbsp dijon mustard
1 tbsp honey
2 tsp coconut aminos or soy sauce
¼ tsp dried thyme
¼ tsp garlic powder
Pinch of salt & pepper


INSTRUCTIONS:

  1. Preheat the oven to 450 degrees. 
  2. While the oven is preheating, place broccoli florets, potatoes, and onion in a large bowl. Drizzle with 2 tbsp of oil. Sprinkle them with salt & pepper. Toss to coat and set aside.
  3. In a small bowl, combine the brown sugar, cumin, chili powder, paprika, onion powder, garlic powder, salt, black pepper, and chipotle powder. 
  4. Rub the chicken with remaining 1 tsp of oil and sprinkle all over with the seasoning mixture. 
  5. When the oven is preheated, spray a baking sheet with cooking spray. Spread the vegetables and potatoes in an even layer on the baking sheet, leaving spaces for the chicken. Nestle the chicken among the vegetables. If there is not room on the baking sheet you could cook potatoes on a separate baking sheet. 
  6. Place the baking sheet into the oven and bake for 20 minutes. Stir the vegetables and continue cooking until the chicken is cooked through to 165 degrees F - about 5-10 more minutes. 
  7. While the chicken is cooking, prepare the honey mustard sauce by combining the mayonnaise, mustard, honey, coconut aminos, thyme, and garlic powder in a small bowl. Taste and season with salt & pepper as desired.
  8. Serve Honey Mustard Sauce with chicken, potatoes, & vegetables. Any leftover sauce can be stored in an airtight container in the fridge for up to 4 days. 

TIDBITS:

  • I much prefer chicken breasts to thighs so just make sure if you use breasts you are accounting for the thickness if cooking time needs to be longer!
  • Apparently you can put the baking sheet into the oven while it's preheating and it will help things to cook through more evenly! You would just pull it out once preheated and then grease the pan and add ingredients.
