Sloppy Joe Bowls

INGREDIENTS:

SWEET POTATO SLICES:
1 large sweet potato cut in ¼ inch slices 
*** (in my opinion this would be better with sweet potatoes as small cubes instead of slices)
1 tbsp olive oil
1 tsp salt

SLOPPY JOE MIX:
2 tbsp olive oil
1 lb ground beef
5 cloves minced garlic (5 tsp)
¼ cup diced yellow onion
¼ cup diced red onion
½  green bell pepper diced
1 tsp dijon mustard
1 tsp yellow mustard
3 tbsp ketchup (low sugar or paleo ketchup if wanting low cal option)
2 tbsp soy sauce or coconut aminos
1 tsp salt 
¼ tsp pepper
2 tbsp tomato paste
1 tsp chili powder 
1 tsp apple cider vinegar 

TOPPINGS:
Sliced pickles
Shredded cheddar cheese (or your favorite cheese)
Additional dijon mustard
Original recipe calls for pickled onions (your choice here - not my fav)


DIRECTIONS:

  1. Preheat oven to 415 degrees 
  2. Place sweet potato slices on a baking sheet. (can line with foil or parchment paper for easier clean up) Drizzle potatoes with olive oil and massage to coat both sides. Sprinkle them with salt. 
  3. Place in the oven on the middle rack and roast for 10-12 minutes or until firm but tender. 
  4. While potatoes are cooking, bring large cast iron or normal skillet to medium-high heat. Add oil and swirl to coat the pan.
  5. Add garlic and cook until fragrant ~ 30 seconds. Add red onion, yellow onion, and diced bell pepper. Saute for 2-3 minutes until onions and green pepper is softened. 
  6. Add ground beef to the pan. Cook until beef is cooked through ~ 7 minutes. Drain excess grease.
  7. Add dijon mustard, yellow mustard, ketchup, soy sauce, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir to combine.
  8. Taste and adjust. If you want saucier sloppy joes add additional ketchup and tomato paste. 
  9. Add sloppy joe mixture with slices of roasted potato in a bowl. Top with sliced pickles, cheese, and a little extra dijon mustard. 

TIDBITS:

  • If not able to find tomato paste can substitute tomato sauce or puree at a ratio of 3 tbsp sauce/puree for every 1 tbsp of paste 
  • Can substitute rice wine vinegar, red wine vinegar, or white wine vinegar or apple cider vinegar if you already have any of these in house!
  • Double the recipe for leftovers - really good for leftover lunches.
