Sloppy Joe Bowls

INGREDIENTS:
SWEET POTATO SLICES:
1 large sweet potato cut in ¼ inch slices
*** (in my opinion this would be better with sweet potatoes as small cubes instead of slices)
1 tbsp olive oil
1 tsp salt
SLOPPY JOE MIX:
2 tbsp olive oil
1 lb ground beef
5 cloves minced garlic (5 tsp)
¼ cup diced yellow onion
¼ cup diced red onion
½ green bell pepper diced
1 tsp dijon mustard
1 tsp yellow mustard
3 tbsp ketchup (low sugar or paleo ketchup if wanting low cal option)
2 tbsp soy sauce or coconut aminos
1 tsp salt
¼ tsp pepper
2 tbsp tomato paste
1 tsp chili powder
1 tsp apple cider vinegar
TOPPINGS:
Sliced pickles
Shredded cheddar cheese (or your favorite cheese)
Additional dijon mustard
Original recipe calls for pickled onions (your choice here - not my fav)
DIRECTIONS:
- Preheat oven to 415 degrees
- Place sweet potato slices on a baking sheet. (can line with foil or parchment paper for easier clean up) Drizzle potatoes with olive oil and massage to coat both sides. Sprinkle them with salt.
- Place in the oven on the middle rack and roast for 10-12 minutes or until firm but tender.
- While potatoes are cooking, bring large cast iron or normal skillet to medium-high heat. Add oil and swirl to coat the pan.
- Add garlic and cook until fragrant ~ 30 seconds. Add red onion, yellow onion, and diced bell pepper. Saute for 2-3 minutes until onions and green pepper is softened.
- Add ground beef to the pan. Cook until beef is cooked through ~ 7 minutes. Drain excess grease.
- Add dijon mustard, yellow mustard, ketchup, soy sauce, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir to combine.
- Taste and adjust. If you want saucier sloppy joes add additional ketchup and tomato paste.
- Add sloppy joe mixture with slices of roasted potato in a bowl. Top with sliced pickles, cheese, and a little extra dijon mustard.
TIDBITS:
- If not able to find tomato paste can substitute tomato sauce or puree at a ratio of 3 tbsp sauce/puree for every 1 tbsp of paste
- Can substitute rice wine vinegar, red wine vinegar, or white wine vinegar or apple cider vinegar if you already have any of these in house!
- Double the recipe for leftovers - really good for leftover lunches.
