Sloppy Joe Stuffed Sweet Potatoes

Time: 20-30 minutes


INGREDIENTS:

2-4 sweet potatoes (depending on size)
1 lb ground beef 
2 tbsp olive oil
5 cloves minced garlic (5 tsp)
¼ cup diced yellow onion
¼ cup diced red onion
½  green bell pepper diced
1 tsp dijon mustard
1 tsp yellow mustard
3 tbsp ketchup 
2 tbsp soy sauce or coconut aminos
1 tsp salt 
¼ tsp pepper
2 tbsp tomato paste
1 tsp chili powder 
1 tsp apple cider vinegar 
Pickles for topping
Shredded cheddar cheese for topping


INSTRUCTIONS:

  1. Rinse off your potatoes. Take each sweet potato and stab it with a fork a bunch of times. Place each one into the microwave for 5-6 minutes. Be careful when removing them. You can store them in aluminum foil to keep each one warm while you make the ground beef. 
  2. While potatoes are cooking, bring a large cast iron or normal skillet to medium-high heat. Add oil and swirl to coat the pan.
  3. Add garlic and cook until fragrant ~ 30 seconds. Add red onion, yellow onion, and diced bell pepper. Saute for 2-3 minutes until onions and green pepper is softened. 
  4. Add ground beef to the pan. Cook until beef is cooked through ~ 7 minutes. Drain excess grease.
  5. Add dijon mustard, yellow mustard, ketchup, soy sauce, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir to combine.
  6. Taste and adjust. If you want saucier sloppy joes add additional ketchup and tomato paste. 
  7. Cut each sweet potato in half. Smash the insides a little so it’s easier to eat and top with the sloppy joe mix. Add your preferred toppings. Serve with your side of choice. 

TIDBITS:

  • When we made this Aldi had some MASSIVE sweet potatoes so we ended up each eating ½ a potato 
  • If you’re a no microwave person you could bake the sweet potatoes at 375 for 30 minutes to an hour depending on the size.
