Sloppy Joe Stuffed Sweet Potatoes

INGREDIENTS:
2-4 sweet potatoes (depending on size)
1 lb ground beef
2 tbsp olive oil
5 cloves minced garlic (5 tsp)
¼ cup diced yellow onion
¼ cup diced red onion
½ green bell pepper diced
1 tsp dijon mustard
1 tsp yellow mustard
3 tbsp ketchup
2 tbsp soy sauce or coconut aminos
1 tsp salt
¼ tsp pepper
2 tbsp tomato paste
1 tsp chili powder
1 tsp apple cider vinegar
Pickles for topping
Shredded cheddar cheese for topping
INSTRUCTIONS:
- Rinse off your potatoes. Take each sweet potato and stab it with a fork a bunch of times. Place each one into the microwave for 5-6 minutes. Be careful when removing them. You can store them in aluminum foil to keep each one warm while you make the ground beef.
- While potatoes are cooking, bring a large cast iron or normal skillet to medium-high heat. Add oil and swirl to coat the pan.
- Add garlic and cook until fragrant ~ 30 seconds. Add red onion, yellow onion, and diced bell pepper. Saute for 2-3 minutes until onions and green pepper is softened.
- Add ground beef to the pan. Cook until beef is cooked through ~ 7 minutes. Drain excess grease.
- Add dijon mustard, yellow mustard, ketchup, soy sauce, salt, pepper, tomato paste, chili powder, and apple cider vinegar. Stir to combine.
- Taste and adjust. If you want saucier sloppy joes add additional ketchup and tomato paste.
- Cut each sweet potato in half. Smash the insides a little so it’s easier to eat and top with the sloppy joe mix. Add your preferred toppings. Serve with your side of choice.
TIDBITS:
- When we made this Aldi had some MASSIVE sweet potatoes so we ended up each eating ½ a potato
- If you’re a no microwave person you could bake the sweet potatoes at 375 for 30 minutes to an hour depending on the size.
