Steak Tips with Roasted Carrots & Potatoes

INGREDIENTS:
1.5 - 2 lbs top sirloin cut into cubes
2 tbsp low sodium worcestershire sauce
2 tbsp dijon mustard
1 tsp dried parsley
½ tsp pepper
6 carrots
1 bag of little potatoes
2 tsp garlic salt
1 tsp thyme
4 cloves minced garlic
Olive oil
DIRECTIONS:
1. Preheat oven to 400 degrees and line a baking sheet with parchment paper or foil
2. Slice potatoes into 1/4ths and put into a bowl with sliced carrots
3. Cover with olive oil (about 2 tbsp or less) and season with garlic salt, thyme, and pepper
4. Spread onto the baking sheet and bake for 30 minutes or until potatoes are softened
5. Mix cubed top sirloin in a bowl with worcestershire sauce, dijon mustard, parsley, and a liberal amount of salt and pepper. Let sit for 10-15 minutes.
6. Melt ¼ cup butter in a large nonstick skillet and add garlic. Once melted and garlic is fragrant add in steak cubes and cook on each side for 1-2 minutes or until steak is at desired doneness.
