Asian Glazed Turkey Meatballs and Broccoli

INGREDIENTS:
FOR MEATBALLS:
1 lb ground turkey (or chicken/pork/beef if you prefer)
⅓ cup panko breadcrumbs
1 egg
1 tbsp soy sauce or coconut aminos
¼ tsp ground ginger
1 tsp minced garlic or 1 clove
2 green onions finely sliced
FOR SAUCE:
½ cup soy sauce or coconut aminos
⅓ cup beef broth
¼ cup honey
1 tsp sesame oil
4 tsp minced garlic or 4 cloves
½ tsp ground ginger
¼ tsp black pepper
¼ tsp red chili flakes
FOR VEGETABLES:
1 head of broccoli chopped into florets
½ tsp salt
¼ tsp pepper
3 tbsp soy sauce or coconut aminos
3 tbsp water
1 tbsp butter
INSTRUCTIONS:
- Preheat the oven to 400 degrees F.
- In a large bowl, mix together ground turkey, breadcrumbs, egg, soy sauce, ginger, garlic and green onions until all combined. Make 1 inch sized balls and place on a prepared baking sheet with aluminum foil. (should be about 25 meatballs)
- Bake meatballs for 13-15 minutes, until lightly browned and cooked through.
- If you want to serve with rice, start this now.
- While the meatballs are baking in the oven, combine soy sauce, honey, beef broth, sesame oil, garlic, ginger, and pepper in a small saucepan on the stove and bring to a boil. Reduce the heat and let the sauce simmer for about 5 minutes to thicken up.
- In a separate pan, add broccoli florets, soy sauce, water, and 1 tbsp of butter. Cover the pan and cook on medium heat, stirring occasionally, until broccoli is softened and liquid is mostly absorbed. Toss with salt and pepper.
- Once the sauce has started to thicken up, if you would like it to be thicker, mix ½ tbsp of cornstarch with ½ tbsp water in a small bowl and pour into the sauce. Mix in red chili flakes and turn off the heat.
- Once meatballs are done baking, transfer them to a large bowl and coat them with sauce.
- Spoon meatballs over rice and serve with broccoli. Drizzle with additional sauce and top with optional extra green onion and sesame seeds.
TIDBITS:
- Could realistically swap for another vegetable but the absorbing of the liquids will be different depending on which vegetable you use - so if you decide to use something else I would just bake it or steam it.
- Different meats will require different degrees of doneness so make sure your meatballs are cooked through and add time if ya need to!
