Slow Cooker Buffalo Chicken Sliders with Potato Chips
Servings: 12 sandwiches
Time: About 8 hours total (max 7 hrs in slow cooker and 1 hr active cooking time)
INGREDIENTS:
2 lbs boneless skinless chicken breasts
1 cup buffalo sauce
½ sweet onion
12 slider buns (preferably Hawaiian buns)
2 tsp everything but the bagel seasoning
2 tbsp butter
1 tsp worcestershire sauce
1 tsp garlic powder
6 slices cheddar cheese
Ranch dressing
Bag salad of choice (as an optional side)
2 yukon potatoes cut into as thin of slices as possible (or just buy potato chips)
1 tsp salt
1 tsp pepper
1 tbsp olive oil
INSTRUCTIONS:
- In a slow cooker, add chicken breasts and top with ½ cup wing sauce and onions. Cover and cook on low for 6-7 hours or high for 4-5 hours.
- When you have about 30 minutes left on the slow cooker, preheat the oven to 300 degrees and prepare a large baking sheet with aluminum foil. Cut potatoes into thin slices and place into a medium bowl. Toss with 1 tbsp olive oil, salt, and pepper.
- Place on the baking sheet and spread out as much as possible and bake for 30 minutes. After 30 minutes, start checking every few minutes and pull out any chips that are starting to turn golden brown and crispy. Reposition the chips on the sheet pan as necessary to continue to bake through.
- Remove chicken from the slow cooker and shred using 2 forks or a stand mixer. Reserve ¼ cup liquid from the slow cooker and discard the rest. Once shredded, return to the slow cooker bowl and mix in the reserved liquid and remaining ½ cup wing sauce.
- Once the chicken is finished, start preparing the sliders to bake. Increase the oven temp to 350. Keep a close eye on any remaining potatoes you have in there, continuing to remove finished chips.
- Cut slider buns in half and place on another greased baking sheet. Dish the chicken onto the buns evenly. Add slices of cheese on top and then drizzle ranch dressing on top of the cheese slices. Place the tops of the slider buns back on..
- In a small bowl, melt 2 tbsp of butter. Combine with worcestershire sauce and garlic powder. Mix well.
- Using a brush, evenly spread the butter mixture onto the top of the slider buns. Once coated in liquid, sprinkle the bagel seasoning on top of the buns.
- Place into the oven for 15 minutes. Once potato chips are all finished and crispy and sliders are done baking, remove from the oven and serve with a salad of your choice.
