Garlic Butter Pork Bites with Parmesan Roasted Cauliflower

INGREDIENTS:
FOR PORK BITES:
2 lbs boneless pork chops, cut into 1 inch cubes (trim fat)
½ tsp garlic powder
½ tsp salt
½ tsp pepper
1 tbsp olive oil
2 tbsp butter
¼ cup chicken broth, beef broth, or dry white wine
½ lemon juiced
4 cloves of garlic minced
½ tsp optional red pepper flakes
FOR CAULIFLOWER:
1 large head cauliflower cut into florets
1 tbsp olive oil
¼ cup grated parmesan cheese
Salt & pepper to taste
- Optional to add roasted baby or sweet potatoes on the pan with your cauliflower (see tidbits)
INSTRUCTIONS:
- Preheat the oven to 425 degrees. Prepare a baking sheet and line with aluminum foil or parchment paper. Chop cauliflower into florets and place into a large bowl. Cut pork chops into cubes with fat trimmed and set aside.
- In the bowl of cauliflower, add the olive oil, garlic, parmesan, salt and pepper and stir to coat. Spread the cauliflower out in a single layer onto the prepared baking sheet.
- Place cauliflower into the oven for 15 minutes.
- While cauliflower is cooking, combine spices for the pork bites and cover the pork bites evenly with seasoning. Heat a large skillet with olive oil over medium heat. Add the pork bites in a single layer and allow to cook 2 minutes without stirring to sear the outside. Stir and continue to cook for 3-5 minutes or until they are cooked through to 145 degrees. Remove from the skillet and add the chicken broth and lemon juice to deglaze the pan, scraping all the brown bits from the bottom.
- After the cauliflower has cooked for 15 minutes, turn the oven to broil and roast for an additional 3-5 minutes or until the cauliflower has browned on the edges.
- Add the fresh garlic, butter, and optional red pepper flakes to the broth mixture and stir until butter melts and starts to bubble.
- Add the pork bites back to the lemon butter sauce and toss to coat. Serve alongside roasted cauliflower and optional carbohydrate of your choice.
TIDBITS:
- If you do decide to add roasted normal or sweet potatoes with the cauliflower, add another tbsp of olive oil and ¼ cup of parmesan to coat the potatoes also. Potatoes will need twice the cooking time so be sure to add those to the oven first.
- Boneless pork chops are the way to go in my opinion because they are easy to chop up.
- We served ours with a side of frozen gnocchi from Trader Joes but sadly we don't have a Trader Joes within 3 hours of us so not gonna make that one a must have on the menu!
