Shrimp Fajita Tacos

INGREDIENTS:
1.5 lbs of shrimp
1 tbsp butter + ½ tbsp
1 tsp chili powder
½ tsp ground cumin
½ tsp paprika
¼ tsp garlic powder
½ tsp salt
1 lime + 1 more if want to squeeze over tacos
Flour tortillas
1 red bell pepper
1 green bell pepper
1 orange bell pepper
1 yellow bell pepper
1 white onion
1 jalapeno
¼ cup chopped cilantro
½ tsp chili powder (divided)
Chipotle sauce or taco sauce of your choice
INSTRUCTIONS:
- Slice peppers and onion. Chop jalapeno and cilantro.
- Heat 1 tbsp butter in a frying pan. Once melted, add in peppers, onion, and jalapeno. Cook until tender - about 6 minutes.
- Place shrimp into a bowl and cover with chili powder, cumin, paprika, garlic powder, and salt. Squeeze juice of 1 lime over shrimp. Toss shrimp to cover.
- Heat ½ tbsp in a separate frying pan. Once melted, add shrimp and cook until opaque and cooked through.
- While vegetables and shrimp are cooking, warm tortillas. If you have a gas stove you can char tortillas over a burner, otherwise warm in a microwave.
- Once all ingredients are cooked through, place shrimp and vegetables on a tortilla. Top with cilantro and taco sauce of your choice.
